MAKES APPROXIMATELY 16 PATTIES

INGREDIENTS

  • 1 cup or 165g grated raw potato, juice squeezed out
  • 2 cups or 250g grated carrot
  • 1 cup or 145g zucchini
  • 1½ cups or 200g finely chopped onion
  • 2 cups or 260g sunflower seeds, finely ground
  • 2 tablespoons onion powder
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 2 tablespoons tomato paste
  • 1 cup or 215g tomato purée
  • 1½ tablespoons psyllium husk

Instructions

METHOD

    Preheat oven to 180°C (350°F).

    • Add the grated potato, carrot, zucchini and finely chopped onion to a large mixing bowl.
Add the ground sunflower seeds, onion powder, dried thyme and salt. Mix well to combine.
Add the tomato paste and tomato purée and mix until all the ingredients are evenly combined.
Lastly, add the psyllium husk and mix thoroughly. Allow the mixture to stand for a few minutes so the psyllium can absorb some of the moisture and help bind the mixture together.
Using your hands, shape the mixture into evenly sized patties.
Line a baking tray with baking paper and place the patties onto the tray, leaving a little space between each one.
Bake in the preheated oven for 20–30 minutes, or until the patties are golden and firm on the outside.
Allow the patties to cool slightly before serving.
